The following table contains the location(s) of stat boosters, including Candies, Rare Candy, PP Ups, PP Maxes, Bottle Caps, and Gold Bottle Caps in Let's Go Pikachu and Let's Go Eevee.
Catching wild Pokémon can reward the player with Candies. The type of Candy the player will receive is dependent on what the Pokémon's EV yield is in other Pokémon games. The mapping of stats to Candy is as follows:

The higher the player's Catch Combo, the more likely it is that the player will receive Candy L and Candy XL for their captures, and the more likely it is that the player will receive higher amounts of Candy.
Professor Oak will reward the player with Candy for transferring Pokémon to him. For every Pokémon transferred, he will provide one Candy. The type of Candy obtained this way is whatever Candy the Pokémon may yield when caught in the wild.
If 50 individuals of a single species are transferred to Professor Oak, he will give the player one candy that is compatible with that Pokémon's species. For example, 50 Bulbasaur, Ivysaur, or Venusaur transferred will yield one Bulbasaur Candy.
If the player has 25 of the same species in the GO Park, they can play a minigame. Completing this minigame in the time limit will reward the plaayer with random stat Candies.
If a Pokémon is sent for a stroll in the Poké Ball Plus, the player can receive two Candies for every 5000 EXP gained.
When the player retrieves a Pokémon left at the Day Care, they will receive an item, depending on the number of steps taken since depositing the Pokémon. Rare Candies are among the possible items, and have the following chances of being obtained.

Some Coach Trainers will give away Pikachu or Eevee Candy when defeated, depending on the game. These Candies can only be obtained one time.
