This page contains information about the facilities available in Jubilife Village. Clothing locations (including those that can be purchased at Anthe's shop) are detailed here.
Colza runs a farm located in the west part of the village, which opens up after completing Mission 2: The Galaxy Team's Entry Trial. The player can speak to Colza to choose a crop type to plant in exchange for money. Once the player has caught a specific number of Pokémon (the number depends on the crop type selected), the crop will be harvested, and the player will receive the yield of the harvest. The available crop types are expanded as the player completes requests for Colza.
Based on anecdotal experience, it seems to be the case that every crop type has multiple types of items that can be received from the harvest. Not all items are always contained in every harvest. I don't have any data on whether the received items and their amounts are equally likely or not. The data below is largely based on my own experiences and may not be 100% accurate; if anyone has a more accurate source I can look at, or has experienced something my table doesn't indicate should be possible, please contact me so I can update accordingly.
There are three levels of crop yield that the player can get: the normal yield, a bad crop, or a bumper crop. Based on personal experience, it seems to me that the item types are still generated the same between all three levels, but the quantity of each item will be halved for a bad crop or doubled for a bumper crop. Again, if you have any data on this, please contact me.
The crop types and their requirements, costs, and (suspected) yields are shown below. The Berry (special) harvest requires the free Daybreak update.

Dagero runs a photography studio at the eastern end of Floaro Main Street, which opens up after completing Mission 2: The Galaxy Team's Entry Trial. The player can take pictures here alone or with their Pokémon. The photography options expand as the player makes progress in the story and completes requests for Dagero. After completing Request 102: Daybreak, some characters may appear and ask to take photos with the player; this requires the free Daybreak update.
Any Pokémon that the player takes a photo with will be granted the Hisui Ribbon. This cannot be viewed on a Pokémon unless it is transferred to Pokémon HOME, Scarlet, or Violet.

Simona runs a trading post located between Galaxy Hall and the Training Grounds, which opens up after attaining Survey Corps Rank 1. This shop allows the player to buy items in exchange for Merit Points, which are obtained for finding Lost Satchels or transferring HOME Points from Pokémon HOME. Bagin is located on the ground floor of Galaxy Hall, and will begin offering satchel upgrades after the player talks to Cyllene during Mission 7: The Frenzy of the Lord of the Woods. In exchange for money, Bagin will add one additional item slot to the player's satchel. The player can buy a total of 39 extra slots from him (for a total of 60: the player's starting 20 + 1 obtained during Mission 17: Atop Mount Coronet + 39). Two members of the Ginkgo Guild, Tuli and Ginter, set up shop east of Galaxy Hall after completing Mission 7: The Frenzy of the Lord of the Woods, and will begin selling items to the player after starting Mission 8: Arezu's Predicament. Their inventories expand as the player makes progress in the story.

Ginter sells sets of multiple helpful items, evolutionary items, and Rotom's appliances that allow it to change form. When spoken to, Ginter will offer the player a choice of three items for purchase. (Prior to version 1.1.0, Ginter only offered one item at a time.) The player can purchase one or more of his stock, but he will not refresh his stock until the player catches 20 Pokémon.
The items he can sell have their own rarities associated with them, and his available offerings change as the player progresses through the story. This spreadsheet, based off research compiled by Sibuna, contains the technical details and the exact appearance rates of each item depending on the player's story progress. Here, I will simply list the available items, their prices, and the story progress required for each.
The items he can sell are divided into three categories in the tables below: item sets, single items, and one-time items.
Item sets are sold as a set of a single item with a high quantity. According to Bulbapedia, the Scatter Bang, Jet Ball, and Bean Cake sets were added in the Daybreak update, but I cannot confirm this.

One-time items are only sold by Ginter a single time; once purchased, the player has them forever. These consist of the five applicances that can allow Rotom to change form, which are sent to the player's quarters, and the Unusual Shoes, a pair of slippers used as clothing available for 5000. All one-time items are added to Ginter's inventory after the player completes Mission 10: The Lordless Island.
The first time the player buys an appliance, it will cost 20000. Every subsequent appliance costs an additional 20000, with the final appliance costing 100000. Ginter may offer them in any order, and they can be purchased in any order.
Bonn runs a Candy Shop outside Galaxy Hall, which opens up after completing Mission 8: Arezu's Predicament. He sells different types of Exp. Candy.

Zisu at the Training Grounds can tutor Pokémon moves, trade Grit items for their stronger versions, and allow Pokémon to master moves. Her services become available after starting Mission 5: A Request from Mai.

Zisu will trade Grit items as follows:
She will also offer to trade grit items in bulk, offering to take whatever the highest multiple of 10 the player has for the specified Grit item and returning the appropriate amount of higher-level Grit items. The ability to bulk trade might have been added in the free Daybreak update; I am unable to check.
Charm Lady Lucille, at the folk shrine located between the Training Grounds and Galaxy Hall, can sell the player Charms that provide benefits in the field. She begins selling Charms after starting Mission 3: The Basics of Crafting.
There are five colors for each charm (Red, Blue, Pink, Teal, and Yellow), indicated by the color's first letter in the charm's name. The cost of the charm depends on how many charms of the same type the player already has in their inventory. Each charm takes up its own slot in the satchel.
The costs of each successive charm are shown in the table below.
